Mike Spiegel has always had a passion for coaching football…and for authentic sub sandwiches. That passion is part of what would later guide him towards his second career. (The sub sandwich is known to be served “Mike’s Way”—that is, with onions, lettuce, tomatoes, olive oil, red wine vinegar and spices.) Mike enjoyed the sub sandwiches so much, when he’d leave to head back to college, he’d get about five sandwiches to-go, to take with him. Peter went on to become owner and proprietor of Mike's Subs, later franchising and changing the name to Jersey Mike’s Subs, paying homage to where the sub sandwich had been born.
