But very few beverage companies so far have exclusively focused on refining water kefir until Florida-based Sunny Culture came onto the scene about three years ago. Sunny CultureHowever, Sunny Culture is not quite like any other kombucha or kefir products on the market due to its use of live culture and unique fermentation process. “The cool thing is the culture in water kefir can grow faster compared to kombucha that usually takes about two to three weeks,” Whitner explained to me.
