COLUMN: Historic staple foods varied across world


Hunter/gatherers discovered different staples depending on where they were, columnist explainsHumans migrated from Africa to Eurasia some 50,000 years ago. In their new territories, hunter/gatherers discovered new foods, particularly ‘staples.’ These are foods that yield the most energy for the least effort. Meanwhile, in Africa, hunter/gatherers began to rely on sorghum and various types of millet as staple foods. A semi-solid staple food, polenta, was based on maize in Southern Europe. In East and Central Africa, a similar staple (called sadza or ugali) was originally sorghum or millet based, but it is made of maize today.
