Serve this super-refreshing cocktail of citrus flavours – think tart pink grapefruit and sweet oranges – in a wine glass filled with lots of ice to keep it chilled right down to the last sip. There’s a bit of sparkle in there, too, from the prosecco and soda water. It makes a lovely, long summer drink. Chase the rainbowServes 130ml pink grapefruit gin – Whitley Neill or Chase, for instance1 tbsp (15ml) standard 1:1 sugar syrup2 dashes orange bitters20ml pink grapefruit juice50ml prosecco50ml soda water1 twist grapefruit zest, to garnishPut a handful of ice in a wine glass, then add the gin, sugar syrup, bitters and grapefruit juice. Stir, top with the prosecco and soda water, garnish with a twist of grapefruit zest and serve.
