Our cookbook of the week is Japanese Home Cooking by teacher, noodle maker and grain activist Sonoko Sakai. “If you go to a Japanese okonomiyaki place they’ll really pile it up with bonito flakes and lots of sauce. Additionally, Sakai adds, the recipe produces fairly small pancakes; if you prefer larger okonomiyaki, simply divide the batter by four rather than eight.
