Apple Pay is one of my best arguments when trying to explain to someone why I stick with Apple's ecosystem. Up until about a year ago, Apple Pay has mainly been a "summoned" type of transaction. You click the Apple Pay button, double-click the relevant hardware button, and you're done. When the Apple Pay confirmation pops up, hold off on that double-click! Just go to Settings > Wallet & Apple Pay and enter the new address.
