When it comes to its role in Jewish history and food culture, the unleavened bread is unrivalled, says editor-in-chief Alana Newhouse. “The exodus (from Egypt), which in some senses is the beginning of the establishment of the Jewish people, churns on a food. “The history of Jewish food is a history that is very challenging and complicated. “You can’t have Jewish food, and in some senses you can’t have Jewish history, without boundaries,” says Newhouse. And I think that the creativity of Jewish food came from having to be inside those boundaries.
