This became starkly clear when I recently visited Kheer at Roseate House New Delhi to sample a fine selection of delicacies from Rampur’s royal cuisine with Muhammad Kazim Ali Khan, the Nawab of Rampur. The star of the show was what the Rampuris call the yakhni pulao. “In Rampur, if you ask for a biryani, they will serve you the yakhni pulao. Feasts or funerals, the Rampuris swear by the yakhni pulao. But in Rampuri cuisine, yakhni is not an individual dish; it will be a part of the pulao,” he adds.
