Unless you’re lucky enough to live near a farmer who grows fresh peas, frozen peas are the closest you can get to the crop. Flash-frozen at peak season before the sugar turns into starch, they can sit in your freezer for a while without losing their bright, crisp flavour. The first time I ate frozen peas with butter was an epiphany. Vegetables in the frozen food aisle are not all created equal—I use most frozen vegetables only in soups. But frozen peas are so fresh-tasting and delicious, they might almost be better than the real thing.
